존댓말 is a map of the room

Grammar books call it 'polite'. Koreans call it knowing where you stand.

-요 is the public floor. -습니다 is the presentation floor. 반말 is the kitchen.

Verbs change more than pronouns. 먹어요 / 먹습니다 / 먹어. Same rice, three rooms.

Staff 존댓말 to you does not mean you 반말 back. They are working. You are a customer, not family.
